Savory Chinese chicken chow mein loaded with fresh veggies - a quick and wholesome midweek dinner choice.
Ingredients:
500g chicken fillets
1530.00 gm chicken style liquid stock
50.00 gm jasmine rice
2onions, finely chopped
250.00 ml slicedcelery
250.00 ml slicedcarrots
250.00 ml green beans
250.00 ml broccoli
250.00 ml cauliflower
5.00 gm curry powder
1 tsp Chinese five spice
2 tsp gratedginger
450g packet Singapore noodles
100g packet crunchy fried noodles, to serve
Instructions:
Steam the chicken fillets over gently simmering water for 8 minutes or until cooked through. Let it cool slightly, then shred it into rough pieces.
In a wok or large saucepan, bring stock to a boil over high heat. Stir in rice, vegetables, curry powder, five spice, and ginger. Reduce heat to low and simmer for 15 to 20 minutes until rice is tender and vegetables are cooked to your preference.
Prepare the noodles according to package instructions, then drain them.
Combine the chicken and cooked noodles with the rice mixture. Stir and cook for 3 to 4 minutes until everything is heated through. Serve in bowls and garnish with crunchy noodles.
