Kid-friendly veggie-packed dish bursting with flavor to make feeding the little ones a breeze.
Ingredients:
  • 450g packet fresh hokkien noodles
  • 40.00 ml rice wine vinegar
  • 42.00 gm salt-reduced soy sauce
  • 20.80 gm salt-reduced tomato sauce
  • 5.00 gm cornflour
  • 18.40 gm rice bran oil
  • 500g Free Range Chicken Breast, thinly sliced
  • 2 carrots, cut into batons
  • 4 green onions, thinly sliced diagonally
  • 2 garlic cloves, crushed
  • 250g snow peas, thickly sliced lengthways
  • Fresh coriander leaves, to serve
Instructions:
  • Place noodles in a heatproof bowl and cover with boiling water to soften for 2 to 3 minutes. Drain and use a fork to separate noodles. Mix vinegar, soy sauce, tomato sauce, and cornflour in a bowl.
  • Preheat a wok or large frying pan over medium-high heat. Add 2 teaspoons of oil and swirl to coat the pan. Stir-fry the chicken in batches for 3 to 4 minutes until golden and cooked through. Transfer to a bowl.
  • In a hot wok, add the carrot and onion. Stir-fry for 2 minutes until the carrot is tender. Introduce garlic and stir-fry for 30 seconds until aromatic. Toss in chicken, noodles, snow peas, and sauce mixture. Stir-fry for 1 to 2 minutes until everything is hot. Finish off by sprinkling coriander leaves on top of the noodles. Serve right away.
