Chicken chow mein

Exciting twist on classic Chinese chicken chow mein recipe.
Ingredients:
  • 5 cm piece of ginger
  • 2 cloves of garlic
  • ½-1 fresh red chilli to your taste
  • 1 large skinless free-range chicken breast
  • 2 spring onions
  • ½ a bunch fresh coriander (15g)
  • 1 bok choi
  • 4 shiitake mushrooms optional
  • 100 g medium egg noodles
  • groundnut oil
  • 1 heaped teaspoon cornflour
  • 220 g tinned water chestnuts
  • 2-3 tablespoons low-salt soy sauce
  • 1 small lime
Instructions:
  • 1. Place a large pan of water on high heat to boil. 2. Peel and finely slice ginger, garlic, and chili. Cut chicken into finger-sized strips and season lightly with salt and pepper. Slice the spring onions, chop coriander stalks, and halve the bok choi. 3. Heat a wok or large frying pan on high heat, add groundnut oil, then cook chicken until slightly browned. Add ginger, garlic, chili, coriander stalks, mushrooms (if using), and half of the spring onions. Stir-fry for 30 seconds. 4. Cook noodles and bok choi in boiling water for 2-3 minutes. 5. Add cornflour, water chestnuts, and their water to the wok. Remove from heat, stir in soy sauce and lime juice. 6. Drain noodles and bok choi, reserving some cooking water. Add them to the wok, mix well, and adjust seasoning with soy sauce if needed. 7. Divide between plates or a serving platter. Top with remaining spring onions and coriander leaves. Serve with lime wedges.
