Chicken chow mein

Indulge in a flavorful bowl of chicken and noodles - no utensils required!
Ingredients:
  • 350g fresh chow mein noodles
  • 1.25 gm arrowroot
  • 36.40 gm peanut oil
  • 2 chicken breast fillets, trimmed, thinly sliced diagonally
  • 2cm piece ginger, peeled, grated
  • 1 brown onion, halved, sliced
  • 1 red capsicum, cut into 2cm pieces
  • 43.20 gm hoisin sauce
  • 24.40 gm oyster sauce
  • 100g beansprouts, trimmed
Instructions:
  • In a large heatproof bowl, place the noodles and cover with boiling water. Let stand for 2 minutes or until tender. Drain and rinse under warm water. Mix arrowroot with 2 tablespoons of cold water to make a paste.
  • Preheat a large wok over high heat until hot. Add 2 teaspoons of oil, ensuring it coats the base and sides. Stir-fry one-third of the chicken for 1 minute until golden, then transfer to a plate. Repeat the process in 2 more batches with the remaining chicken and oil.
  • Add the rest of the oil, along with the ginger and garlic, to the wok and stir-fry for 30 seconds. Then, add the onion and stir-fry for another minute, or until tender. Finally, return the chicken and any juices to the wok.
  • Toss capsicum, hoisin sauce, oyster sauce, and arrowroot mixture into a wok. Stir everything for a minute. Now, add noodles and continue to stir for another minute until noodles are heated through. Take it off the heat, toss in beansprouts, and mix well. Serve and enjoy!
