Delicious chicken chow mein with vibrant Asian flavors, ready in no time.
Ingredients:
  • 2 x 375g packets fresh fine egg noodles
  • 1/2 (about 500g) barbecued chicken
  • 65g desiccated coconut
  • 35g sesame seeds
  • 125ml soy sauce
  • 60ml fish sauce
  • Juice of 3 limes
  • 3 cloves garlic
  • 150g baby green beans, chopped
  • 125g packet baby corn, chopped
  • 1 bunch coriander, leaves picked
Instructions:
  • Place the noodles in a heatproof bowl and cover them with boiling water. Let them stand for 1 minute, then drain and rinse with cold water. Cut the noodles into shorter lengths using kitchen scissors to make them easier to mix with the other ingredients. Finely shred the chicken, removing the skin and bones.
  • Toast coconut and sesame seeds in a dry frying pan over low heat, stirring constantly, until they turn golden brown.
  • Combine sauces, sugar, and lime juice in a bowl and whisk until blended.
  • In a frying pan over medium heat, heat oil and stir in garlic, beans, and corn for 2-3 minutes until tender. Add coriander, mix well. Transfer to a large bowl and gently toss to combine. Serve hot.
