Satisfy your cravings with a delicious Chinese-inspired cereal bowl packed with carbs and protein.
Ingredients:
  • 2L (8 cups) water
  • 110g (1/2 cup) medium grain rice, rinsed
  • 20.00 ml finely shredded fresh ginger
  • 400g chicken breast fillet, finely chopped
  • 30.00 gm caster sugar
  • 3 tsp Chinese cooking wine (see note)
  • 4.80 gm salt
  • 4 spring onions (shallots), trimmed, thinly sliced
  • Sesame oil (optional), to serve
  • Thinly sliced fresh red chilli, to serve
Instructions:
  • In a saucepan over medium-high heat, combine water, rice, and ginger. Bring to a simmer while stirring frequently. Reduce the heat to low and simmer partially covered, stirring occasionally, for about 1 1/2 hours until the rice has broken down.
  • Combine the chicken with the rice mixture and simmer until the chicken is cooked through, for about 5 minutes. Then, stir in the sugar, cooking wine, salt, and the light green part of the spring onion. Season to taste.
  • Serve the congee in individual bowls, garnish with the green part of the spring onion, drizzle with sesame oil, and sprinkle with chili on top.
