Chicken ginger congee

Elevate your chicken congee with fragrant sesame oil, crispy fried shallots, and garlic for a flavor-packed experience.
Ingredients:
  • Soy sauce to serve
  • 1 litre chicken style liquid stock
  • 500ml water
  • 4 slices fresh young ginger
  • 100.00 gm long grain rice
  • 200g chicken tenderloin, diced into 1cm pieces
  • 1 tsp Chinese rice wine
  • Salt and ground white pepper
  • 40.00 ml finely sliced green onion
  • 1/2 tsp sesame oil
  • 20.00 ml fried shallots (see note)
  • 2 tsp fried garlic (see note)
Instructions:
  • In a large heavy-based saucepan over high heat, bring the chicken stock, water, and ginger to a boil. Add the rice, reduce the heat to medium-low, cover, and simmer steadily for 1 hour. Stir occasionally to prevent sticking until the rice is thickened and most of the liquid is absorbed.
  • Place the chicken in the congee, cover, and simmer until just cooked, about 4-5 minutes. Stir in the rice wine and season with salt and pepper to taste.
  • Present the congee in bowls, garnish with green onions, add a drizzle of sesame oil, and top with fried shallots and garlic. Serve alongside a side of soy sauce.
