Chicken and ginger broth

Nourishing chicken ginger soup to boost health and taste delicious.
Ingredients:
  • 3 (about 160g) fresh lasagne sheets (Latina brand)
  • 1L (4 cups) water
  • 2x 410g chicken style liquid stock
  • 2 (about 360g) single chicken breast fillets, halved lengthways
  • 100g fresh ginger, peeled, thinly sliced
  • 1 125g tray baby corn
  • 20.00 ml finely shredded fresh ginger
  • Freshly ground black pepper
  • 2 green shallots, trimmed, diagonally thinly sliced, to serve
Instructions:
  • Roughly chop the lasagne sheets with a sharp knife into uneven pieces.
  • In a large saucepan, bring water and chicken consomme to a boil over high heat. Reduce heat to medium, then add the chicken and sliced ginger. Simmer uncovered for 12 minutes until the chicken is cooked through. Using a slotted spoon, transfer chicken to a plate and cool for 5 minutes. Shred the chicken into small pieces with your fingers.
  • Pour the broth through a fine sieve into a clean saucepan, removing the ginger. Bring to a boil over high heat. Add chicken, lasagne pieces, and baby corn. Simmer on low, uncovered, for 3 minutes until corn is tender. Mix in shredded ginger, taste, and season with pepper as needed.
  • Serve the broth in bowls and garnish with the green shallots.
