Chicken Corn Chowder

"Rich and comforting chowder made with homemade chicken broth, onions, shallots, potatoes, corn, and cream."
Ingredients:
  • 1 chicken carcass
  • 1 bay leaf
  • 2 tablespoons butter
  • 3 shallots, diced
  • 2 cubes chicken bouillon, crumbled
  • 2 tablespoons dried parsley
  • salt and pepper to taste
  • 2 potatoes, peeled and diced
  • 1.5 cups frozen corn kernels
  • 2 tablespoons heavy cream
Instructions:
  • In a large pot, cover the chicken carcass (including any leftover skin, meat, or bones) with cold water. Add a bay leaf and bring to a boil. Simmer gently for 60 to 90 minutes. Remove from heat, cool slightly, then strain the broth. Shred the chicken meat into bite-sized pieces.
  • Start by melting butter in a large saucepan over medium heat. Sauté onion and shallots until translucent in the melted butter. Add strained broth, chicken meat, bouillon, parsley, salt, pepper, potatoes, and corn. Let it simmer for 15 minutes until the potatoes are cooked and the corn is tender. Finally, take it off the heat and stir in the cream.
