Creamy coconut curry with vegetables and rice for a delicious, satisfying meal.
Ingredients:
  • 3 cloves garlic, crushed
  • 3 small onions, minced
  • 1 slice fresh ginger root
  • 5 tablespoons curry powder
  • 5 tablespoons water
  • 2 tablespoons olive oil
  • 1 cup yogurt
  • 1 cup coconut milk
  • 1 cup milk
  • 2 large potatoes, cubed
  • 1 (4 pound) whole chicken, cut into 8 pieces
Instructions:
  • Combine fresh garlic, onion, and ginger in a small bowl. In another small bowl, blend curry powder with 5 tablespoons of water.
  • In a large skillet over medium-high heat, warm oil. Cook garlic, ginger, and onion until golden brown. Stir in curry paste and saute until aromatic.
  • Combine yogurt, coconut milk, regular milk, and 1 cup of water in a pot. Mix well. Add potatoes and chicken. Bring to a boil, then simmer until potatoes are tender and chicken is cooked through, around 20 to 25 minutes.
  • Season with salt to your liking and let it simmer for 2 more minutes until the curry is complete!
