Spicy Spanish Diablo Chicken is versatile; enjoy leftovers over salad greens!
Ingredients:
  • 0.5 cup hot pepper sauce
  • 1 cup reduced fat sour cream
  • 0.5 cup ketchup
  • 0.25 cup honey
  • 0.25 teaspoon paprika
  • 0.25 teaspoon cumin
  • 8 skinless, boneless chicken breast halves
  • 0.25 cup vegetable oil
  • 2 cloves garlic, minced
Instructions:
  • Combine hot pepper sauce, sour cream, ketchup, honey, paprika, and cumin in a bowl until smooth. Reserve half for later. Marinate chicken breasts in the remaining sauce, covered, in the fridge for at least 2 hours.
  • In a large skillet over medium heat, simmer garlic in vegetable oil until aromatic. Sear marinated chicken breasts in the same skillet until golden brown and fully cooked, approximately 20 minutes.
  • While you wait, heat the reserved marinade in a small saucepan until it boils, then let it cook for 3 to 5 minutes.
  • Ladle the flavorful sauce over the succulent chicken breasts.
