Creamy chicken enchiladas with zesty salsa and rich cream cheese filling - a crowd-pleasing favorite!
Ingredients:
  • cooking spray
  • 1 cup chunky salsa
  • 6 ounces cream cheese, softened
  • 3 cups shredded, cooked chicken
  • 8 (8 inch) flour tortillas
  • 1 (15 ounce) can enchilada sauce
  • 0.5 cup shredded Mexican cheese blend
Instructions:
  • Preheat the oven to 375°F (190°C). Line a rimmed baking sheet with aluminum foil and grease it with cooking spray.
  • In a large pan over medium heat, melt cream cheese with salsa until creamy and well combined, stirring constantly for 3 to 5 minutes. Add chicken and heat through for 2 to 3 minutes.
  • Fill tortillas with savory chicken mixture, rolling them up into flavorful enchiladas. Arrange them seam-side down on the baking sheet and generously top with enchilada sauce.
  • Place in the preheated oven for 10 minutes until heated through. Sprinkle with Mexican cheese and bake for an additional 5 to 10 minutes or until cheese is fully melted. Serve piping hot.
