Elevate store-bought flatbread with creamy Parmesan sauce, spinach, tomatoes, and chicken for a gourmet Chicken Florentine pizza.
Ingredients:
  • cooking spray
  • 1 tablespoon butter
  • 4 cloves garlic, minced
  • 1 tablespoon all-purpose flour
  • 0.75 cup milk
  • 0.75 cup grated Parmesan cheese
  • salt and ground black pepper to taste
  • 1 (7 ounce) 6x13-inch flatbread
  • 1 cup shredded mozzarella cheese
  • 1.5 cups torn fresh spinach leaves
  • 1 cup shredded cooked chicken breast
  • 3 small tomatoes (such as Campari), sliced
  • 0.5 small onion, thinly sliced
  • 0.125 teaspoon salt
  • 1 drizzle olive oil
  • 1 tablespoon grated Parmesan cheese
Instructions:
  • Preheat the oven to 400°F (200°C) while you prepare a large baking sheet lined with foil and lightly sprayed with cooking spray.
  • In a small saucepan over medium heat, melt the butter. Add garlic and saute until fragrant for about 30 seconds. Stir in flour and whisk for 1 to 2 minutes. Pour in milk and whisk until the sauce starts to thicken, about 3 to 4 minutes. Add Parmesan cheese, salt, and pepper and cook until the cheese is melted, about 1 minute. Let it cool for about 5 minutes before using.
  • Layer the flatbread with the cooled sauce and a generous sprinkle of mozzarella cheese. Add spinach, chicken, tomatoes, onion, and a pinch of salt. Drizzle with olive oil and finish with a sprinkle of Parmesan cheese before placing it on the baking sheet.
  • Place the dish in the oven until the cheese is gooey and the crust turns golden brown, which should take about 12 to 15 minutes. Allow it to cool a bit before enjoying.
