Delicious and easy chicken Florentine soup: chicken, veggies, herbs, rice in a flavorful tomato broth.
Ingredients:
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 1 cup diced carrots
  • 1 cup diced celery
  • 2 cloves garlic, minced
  • 1 cup baby spinach leaves
  • 4 cups 99% fat-free chicken broth
  • 1 (15 ounce) can diced tomatoes
  • 1 lemon, juiced
  • 0.25 teaspoon ground black pepper
  • 0.25 teaspoon dried oregano
  • 0.25 teaspoon dried sweet basil
  • 2 cups diced cooked chicken
  • 1 cup cooked white rice
Instructions:
  • In a large pot over medium heat, sauté onion, carrots, celery, and garlic in olive oil until onion is translucent, about 5 minutes. Incorporate baby spinach.
  • Combine chicken broth, diced tomatoes, and lemon juice in a pot. Add pepper, oregano, and basil, then bring to a boil. Stir in chicken and rice, simmer over medium-low heat for 30 minutes to meld flavors.
