Delicious Florentine soup with chicken, spinach, and Parmesan cheese, enhanced by plump tortellini, ready in just 45 minutes.
Ingredients:
  • 1 (12 ounce) package refrigerated cheese tortellini
  • 0.5 large onion, finely chopped
  • 0.5 teaspoon paprika
  • 0.5 teaspoon ground cumin
  • 1 pinch dried marjoram
  • salt and freshly ground black pepper to taste
  • 0.33333334326744 cup all-purpose flour
  • 4 cups chicken stock
  • 2 cups shredded cooked chicken
  • 2 cups fresh spinach
  • 0.5 cup heavy whipping cream
  • 1 cup shredded Parmesan cheese
Instructions:
  • Fill a large pot with lightly salted water and bring it to a rolling boil. Add tortellini and cook uncovered until tender yet slightly firm, about 9 minutes. Drain and enjoy!
  • In a pot over medium heat, melt butter. Add onion and garlic; sauté until onion is tender, about 5 minutes. Mix in paprika, cumin, marjoram, salt, and pepper. Lower heat, then stir in flour. Slowly whisk in chicken stock until smooth.
  • Bring the soup to a boil, stirring often until it thickens. Add tortellini, chicken, spinach, and heavy cream. Stir and heat through for about 5 minutes. Then mix in the Parmesan cheese until it melts, which should take 1 to 2 minutes.
