One-pot chicken and tortellini with creamy pesto cheese sauce, tomatoes, and spinach.
Ingredients:
  • 1.5 pounds chicken breast, cubed
  • 0.5 cup chicken broth
  • 0.5 cup prepared pesto
  • 0.5 cup heavy cream
  • 1 cup Parmesan cheese, divided
  • 1 cup baby spinach
  • 0.5 cup cherry tomatoes, halved
  • 1 (16 ounce) package refrigerated cheese tortellini
Instructions:
  • In a large skillet over medium-high heat, heat olive oil. Add chicken, season with salt and pepper, and sauté until browned and cooked through, about 5 to 10 minutes. Transfer the chicken to a bowl, cover to keep warm, and set aside.
  • Pour chicken broth into the pan to capture all the flavorful browned bits. Add pesto and heavy cream and simmer until thickened. Stir in Parmesan until melted. Toss in spinach and tomatoes and cook until the spinach wilts slightly.
  • Stir in tortellini and cooked chicken until hot and bubbly, for 5 to 10 minutes. Sprinkle with the remaining 1/2 cup Parmesan cheese before serving.
