Chicken Gloria Casserole

Elevate your go-to comfort food with a glorious creamy chicken dish, enhanced with a splash of sherry for an elegant touch.
Ingredients:
  • 3 skinless boneless chicken breasts, trimmed and cut in half lengthwise
  • Salt
  • Pepper
  • 1/3 cup Gold Medal™ all-purpose flour
  • 3 tablespoons vegetable oil
  • 2 tablespoons butter
  • 1 container (8 oz) sliced fresh mushrooms
  • 1/2 cup cream sherry wine
  • 1 can (18 oz) Progresso™ creamy mushroom soup
  • 6 slices Muenster cheese
  • 3 tablespoons chopped fresh parsley
Instructions:
  • Preheat oven to 350°F.
  • Season both sides of the chicken with a pinch of salt and pepper. Next, dredge the chicken in flour in a shallow dish, shaking off any extra.
  • Heat oil in a 12-inch skillet over medium heat. Sear chicken on both sides until lightly browned, then transfer to a 13x9-inch (3-quart) glass baking dish.
  • In the same skillet, melt the butter over medium-high heat. Add mushrooms and season with salt and pepper. Sauté the mushrooms until golden brown. Pour in the sherry and stir for an extra 1 to 2 minutes. Add the soup, mix thoroughly, and heat until warmed through.
  • Drizzle the savory mushroom sauce over the chicken and place a slice of cheese on top of each piece. Fold the cheese in half if needed to fit perfectly on each chicken piece.
  • Cover the dish with foil and bake for 30 minutes. Remove the foil, switch the oven to broil setting, and broil for 1 to 2 minutes to brown the cheese. Take it out of the oven and let it cool slightly before serving.
  • Garnish with fresh parsley leaves.
