Indonesian-inspired coconut chicken sauce: Cream of coconut, garlic, onions, spices. Serve over rice for a delicious meal.
Ingredients:
  • 1 (15 ounce) can cream of coconut
  • 1 cup hot water
  • 3 tablespoons vegetable oil
  • 4 skinless, boneless chicken breast halves
  • 1 tablespoon lemon juice
  • 1 teaspoon ground ginger
  • 1 teaspoon chili powder
  • salt and pepper to taste
  • 2 onions, chopped
  • 3 cloves garlic, peeled and crushed
Instructions:
  • Blend cream of coconut with hot water until silky and fully incorporated; set aside.
  • In a large skillet over medium-high heat, fry the chicken breasts in hot oil until golden brown but still pink inside, approximately 5 minutes per side. Transfer the chicken to a paper towel-lined plate and season with lemon juice, ginger, chili powder, salt, and pepper.
  • Saute onions and garlic in a skillet over medium heat until soft and translucent, for about 5 minutes. Place chicken breasts on top of the cooked onions and garlic, then pour the coconut cream mixture over the chicken. Simmer on medium-low heat until chicken is cooked through and sauce thickens, about 35 minutes.
