Tropical grilled chicken marinated in coconut soy sauce for a crowd-pleasing meal.
Ingredients:
  • 3 pounds skinless, boneless chicken thighs, trimmed
  • 2 cups water
  • 2 cups low-sodium soy sauce
  • 1 (13.5 ounce) can coconut milk
  • 1.5 cups brown sugar
  • 1 bunch green onions, chopped
  • 0.25 cup white onion, chopped
  • 1 teaspoon sesame oil
  • 0.5 teaspoon minced garlic
Instructions:
  • In a large glass or ceramic bowl, combine water, soy sauce, coconut milk, brown sugar, green onions, white onion, sesame oil, and garlic. Add chicken thighs, coat evenly, cover with plastic wrap, and refrigerate to marinate for 4 hours up to overnight.
  • Prepare the grill by preheating it to medium heat and giving the grate a light coating of oil.
  • Take out the chicken from the marinade and dispose of the marinade.
  • Grill the chicken until fully cooked, about 5 to 7 minutes per side, ensuring the center is no longer pink and the juices run clear. Use an instant-read thermometer to confirm it reaches at least 165 degrees F (74 degrees C).
