Broiled chicken breasts baked with a sweet cherry brandy sauce and cherries.
Ingredients:
  • 8 skinless, boneless chicken breast halves
  • 0.25 cup melted butter
  • 1 (16.5 ounce) can pitted Bing cherries, drained, juice reserved
  • 0.5 cup brown sugar
  • 1 (12 fluid ounce) can or bottle chile sauce
  • 0.5 cup water
  • 1 tablespoon Worcestershire sauce
  • 1 onion, thinly sliced
  • 0.5 cup raisins
  • salt and pepper to taste
  • 1 cup brandy
Instructions:
  • Preheat the broiler in the oven.
  • Brush chicken breasts with a delicate coating of melted butter and broil for 2 to 3 minutes per side until they achieve a beautiful light browning.
  • Preheat the oven to 325°F (165°C) for the perfect temperature to work its magic.
  • Transfer the seared chicken to a 9x13 inch baking dish. In a large bowl, mix the cherry liquid, sugar, chile sauce, water, Worcestershire sauce, onion, raisins, salt, and pepper. Pour this flavorful mixture over the chicken.
  • Cover the dish and bake at 325°F (165°C) for 1 hour until perfectly cooked.
  • Uncover the dish and generously pour cherries and brandy over the succulent chicken. Bake for an additional 15 minutes until perfectly cooked.
