Juicy chicken bites marinated and fried to crispy perfection in this flavorful karaage recipe.
Ingredients:
  • 1 tablespoon sake (Japanese rice wine)
  • 2 teaspoons grated fresh ginger
  • 1.5 pounds boneless, skinless chicken breasts, cut into bite-size pieces
  • 2 cups vegetable oil for frying
  • 0.75 cup cornstarch
Instructions:
  • In a large bowl, mix together soy sauce, sake, and ginger. Add chicken and coat well. Cover with plastic wrap and refrigerate to marinate for 30 minutes.
  • Preheat oil in a deep-fryer or large saucepan to 350°F (175°C).
  • In a large resealable plastic bag, combine cornstarch and chicken. Seal the bag and shake well until the chicken is evenly coated with cornstarch.
  • Fry chicken in batches until beautifully golden and juices run clear, for 2 to 3 minutes. Place on paper towels or a wire rack to drain.
