Japanese favorite Karaage chicken: marinated in soy sauce, sake, ginger, and garlic, then deep-fried for crisp perfection.
Ingredients:
  • 2 tablespoons soy sauce
  • 2 tablespoons sake
  • 1 tablespoon vegetable oil
  • 0.5 teaspoon minced fresh ginger
  • 0.5 teaspoon minced fresh garlic
  • 0.5 pound chicken breast, cut into bite-sized pieces
  • 1 cup oil for frying, or as needed
  • 3 tablespoons all-purpose flour
  • 3 tablespoons cornstarch
Instructions:
  • In a bowl, whisk together soy sauce, sake, oil, ginger, and garlic. Add chicken pieces and coat well with the marinade. Let marinate at room temperature for 15 to 20 minutes.
  • In a large saucepan, bring oil to 350 degrees F (175 degrees C).
  • Mix flour and cornstarch on a plate. Use the mixture to coat the marinated chicken.
  • Brown chicken pieces in batches for 3 minutes each. Transfer to a wire rack to rest for 3 minutes.
  • Sear the chicken pieces in the hot oil until very crisp, about 1 to 2 minutes at 375 degrees F (190 degrees C).
