Transform leftover chicken into a zesty Lemon Chicken Linguine with a buttery sauce for an effortless weeknight dinner.
Ingredients:
  • 2 tablespoons olive oil, or more as needed
  • 1 small onion, chopped
  • 2 cloves garlic, minced, or more to taste
  • 2.5 cups milk
  • 3 cubes chicken bouillon
  • 2 teaspoons dried oregano
  • 1 cup cold water
  • 2 tablespoons cornstarch
  • 0.5 pound seasoned grilled chicken chunks
  • 1 (16 ounce) package linguine pasta
  • 0.25 cup lemon juice
  • 1 teaspoon lemon zest
  • 0.5 cup grated Parmesan cheese, or to taste
Instructions:
  • In a saucepan over medium heat, combine butter and olive oil. Sauté onion and garlic until tender without browning, for about 5 minutes. Mix in milk, bouillon, oregano, salt, and pepper. Bring the mixture to a boil, then simmer on medium heat for 5 minutes.
  • Combine cold water and cornstarch in a bowl, whisking until smooth. Add the cornstarch mixture and chicken to the sauce, cooking until heated through and thickened, approximately 5 minutes.
  • Boil a large pot of water with a touch of salt. Cook linguine until al dente, about 11 minutes; then drain.
  • Reduce saucepan heat to low. Stir in lemon juice, parsley, and lemon zest; cook for 1 to 2 minutes until heated through. Add pasta, mix well to coat, then transfer to a serving bowl. Sprinkle with Parmesan cheese before serving.
