Succulent chicken and earthy portobello mushrooms, combined with tangy tomatoes and lemon on linguine for a fast and flavorful dinner.
Ingredients:
  • 1 (16 ounce) package linguine
  • 2 tablespoons butter
  • 1 tablespoon olive oil, or as needed
  • 1 onion, chopped
  • 2 portobello mushrooms, chopped, or to taste
  • 3 cloves garlic, chopped
  • 1 teaspoon olive oil, or as needed
  • 4 skinless, boneless chicken breast halves - thinly sliced and cut into cubes
  • 0.5 cup white wine
  • 1 (14 ounce) can diced tomatoes
  • 1 tablespoon chopped fresh parsley, or to taste
  • 0.5 teaspoon red pepper flakes
  • 1 lemon, halved
Instructions:
  • Boil linguine in a large pot of lightly salted water until al dente, about 11 minutes; then drain.
  • In a skillet over medium heat, sauté onion, mushrooms, and garlic in a combination of butter and olive oil until slightly softened, about 2 to 3 minutes.
  • In a separate skillet, warm 1 teaspoon of olive oil. Saute chicken in the hot oil until fully cooked, about 10 minutes. Add cooked chicken to the onion mixture.
  • Add a generous pour of white wine to the chicken-onion mixture until it simmers. Stir in tomatoes, parsley, red pepper flakes, and linguine until combined. Simmer for 3 to 5 minutes until everything is heated through. Squeeze fresh lemon juice over the mixture and give it a good toss before serving.
