Chicken lettuce cups

Whip up delicious chicken lettuce cups with leftover chicken. Easy and fast!
Ingredients:
  • 100g rice vermicelli noodles
  • 42.00 gm light soy sauce
  • 57.20 gm honey
  • 1 tsp finely grated ginger
  • 1 tsp sesame oil
  • 500.00 ml coarsely shredded roast chicken
  • 65g bean sprout
  • 1 large carrot, peeled, cut into matchsticks
  • 125.00 ml small mint leaves
  • 8 large butter lettuce leaves
  • Toasted sesame seeds, to sprinkle
Instructions:
  • Place the noodles in a spacious heatproof bowl. Pour boiling water over them and let sit for 5 minutes until noodles are tender. Rinse thoroughly under cold running water and drain well.
  • In a small bowl, mix together soy sauce, honey, ginger, and oil. In a large bowl, combine chicken, beansprouts, carrot, mint, and noodles. Pour the dressing over the mixture and toss gently to coat.
  • Evenly distribute the flavorful chicken filling onto crisp lettuce leaves. Garnish with nutty sesame seeds and enjoy promptly.
