Try our flavorful sesame chicken lettuce cups for a simple and satisfying meal.
Ingredients:
  • 500g chicken breast fillets
  • 3cm piece fresh ginger, chopped
  • 42.00 gm soy sauce
  • 48.80 gm Fish Sauce
  • 20.00 ml rice wine vinegar
  • 20.00 ml sesame oil
  • 5.00 gm caster sugar
  • 1 long red chilli, finely chopped
  • 12.00 gm sesame seeds, toasted, plus extra to serve
  • 1 Lebanese cucumber, cut into matchsticks
  • 1 carrot, cut into matchsticks
  • 250.00 ml bean sprouts, trimmed
  • 8 large iceberg lettuce leaves
  • 62.50 ml fried shallots
Instructions:
  • In a medium saucepan, combine the chicken, ginger, half of the soy sauce, and half of the fish sauce. Cover with water and bring to a simmer over medium heat. Reduce heat to low and cook for 5 minutes. Remove from heat and let it stand for 5 minutes until the chicken is cooked through.
  • In a small food processor, blend vinegar, sesame oil, sugar, chili, and the remaining soy sauce and fish sauce until well combined. Pour the mixture into a jug and stir in sesame seeds.
  • Place the chicken on a board and shred it. In a large bowl, mix cucumber, carrot, bean sprouts, shredded chicken, and half of the dressing. Toss everything together. Arrange lettuce leaves on serving plates, spoon the chicken mixture on top, and drizzle with the rest of the dressing. Serve with a finishing touch of fried shallots and extra sesame seeds.
