Ingredients:
  • 42.00 gm soy sauce
  • 48.80 gm oyster sauce
  • 1 tsp sesame oil
  • 500g Chicken Mince
  • 3 shallots, thinly sliced
  • 1 tsp finely grated ginger
  • 2 cloves garlic, crushed
  • 4 medium button mushrooms, finely chopped
  • 220g can bamboo shoots, drained, finely chopped
  • 220g can water chestnuts, drained, finely chopped
  • 30g crunchy noodles
  • 10 small iceberg lettuce leaves, washed, dried, trimmed
  • 12.00 gm sesame seeds
  • 40.00 ml crushed peanuts
Instructions:
  • In a small jug or bowl, mix together sesame oil, soy sauce, and oyster sauce.
  • - Preheat a wok over high heat until smoking. - Drizzle in peanut oil followed by chicken. - Stir-fry for 3-4 minutes, continually breaking up the ground meat until cooked through.
  • Set aside one-third of the shallots for garnish. Combine the rest of the shallots, ginger, garlic, mushrooms, bamboo shoots, and chestnuts with the minced meat. Stir-fry for 2 minutes.
  • Stir in the sesame oil sauce mixture until warmed and slightly thickened. Mix in the noodles.
  • Spoon the mince mixture into each lettuce cup. Sprinkle with sesame seeds, nuts and the remaining shallots.
