Ingredients:
  • 4 dried Chinese mushrooms (see Notes)
  • 20ml (1 tbsp) peanut oil
  • 1 small onion, chopped
  • 10.00 ml grated fresh ginger
  • 300g chicken mince
  • 6 shallots, finely chopped
  • 40ml (2 tbsp) oyster sauce, plus extra to drizzle
  • 40ml (2 tbsp) soy sauce
  • 40ml (2 tbsp) fresh lime juice
  • 125.00 ml chopped coriander leaves
  • 8-12 large iceberg lettuce leaves, to serve
Instructions:
  • Place the dried mushrooms in a bowl with 1/2 cup of boiling water. Let them soak for 15 minutes. Drain, finely chop, and get ready to enhance your dish with their rich flavor.
  • In a wok over medium-high heat, sauté the onion for 1-2 minutes in hot oil. Stir in the mushrooms, ginger, and garlic, and cook for an additional minute.
  • Toss the chicken mince in the wok until it's cooked through. Stir in the shallots, oyster sauce, soy sauce, and lime juice, and cook for an additional 2 minutes until the flavors meld. Remove from heat, mix in the coriander leaves, and serve in lettuce leaves.
  • Drizzle with extra oyster sauce and serve promptly.
