Transform San Choy Bau into a vibrant, wholesome dinner bowl with lean chicken breast mince, colorful veggies like carrots and crisp baby cos lettuce.
Ingredients:
  • 2 tsp sesame oil
  • 1 onion, finely chopped
  • 2 celery sticks, diced
  • 2 tsp finely grated fresh ginger
  • 500g lean chicken breast mince
  • 225g can water chestnuts, drained, chopped
  • 24.40 gm gluten free oyster sauce
  • 20.00 ml salt-reduced tamari
  • 2 baby gem lettuces, trimmed, leaves separated
  • 1 large carrot, peeled, shredded
  • 1 Lebanese cucumber, thinly sliced into ribbons
  • 500.00 ml trimmed bean sprouts
  • Fresh coriander leaves, to serve
  • Sliced chilli, to serve
Instructions:
  • In a large wok over high heat, heat oil until shimmering. Stir-fry onion and celery until softened, about 2 minutes. Add garlic and ginger, stir-fry until fragrant, about 1 minute. Add mince, break it up with a wooden spoon, and stir-fry until golden, about 3-4 minutes. Incorporate water chestnuts, oyster sauce, and tamari, stir-fry until heated through, about 1 minute.
  • Separate gem lettuce leaves and distribute the minced mixture, carrot, and cucumber evenly among serving bowls. Top with bean sprouts, coriander, and fresh chilli before serving.
