Try this delicious and healthy chicken dish for a fuss-free weeknight dinner!
Ingredients:
  • 18.40 gm rice bran oil
  • 500g lean chicken mince
  • 1/2 x 600g packet frozen stir-fry vegetables with garlic and ginger
  • 227g can water chestnuts, drained, sliced
  • 50g fried noodles
  • 4 green onions, thinly sliced
  • 2 baby cos lettuce hearts, leaves separated (see tip)
Instructions:
  • Preheat a wok over high heat and add half of the oil, swirling to coat. Add the mince and cook while stirring with a wooden spoon to break it up, until browned, about 8 minutes. Transfer the cooked mince to a bowl and cover to keep warm. Add the remaining oil to the wok, swirling to coat, then stir-fry the vegetables for about 4 minutes until tender.
  • Add the minced meat back to the wok and toss in the flavor packet from the vegetable mix and water chestnuts. Stir and cook for 2 minutes until everything is heated. Take the wok off the heat and mix in the noodles and onion. Fill the lettuce leaves with the delicious meat mixture and serve.
