Kid-friendly recipe that's both fun to make and delicious to eat!
Ingredients:
  • 1 iceberg lettuce
  • 18.20 gm olive oil
  • 3 green onions, thinly sliced diagonally
  • 500g pork mince
  • 1 small carrot, peeled, grated
  • 1 zucchini, grated
  • 1 small red capsicum, deseeded, finely diced
  • 125g can corn kernels, drained
  • 100.65 gm oyster sauce
  • 65.00 gm tomato sauce
Instructions:
  • Place the lettuce core-side down on a flat surface and gently bang it to loosen. Twist and pull out the core. Remove any damaged outer leaves and discard. Separate the leaves and soak them in a bowl of ice-cold water. Refrigerate until ready to use.
  • In a hot frying pan, sauté green onions briefly in oil. Increase heat, add pork, and stir-fry until browned, about 4 minutes.
  • Add in the colorful mix of carrots, zucchini, capsicum, and corn, stirring until well combined. Mix oyster sauce and tomato sauce in a jug, then pour into the mince mixture. Stir well. Bring to a boil, then lower the heat and let it simmer for 2 minutes.
  • Drain and pat dry lettuce leaves. Arrange lettuce cups on a platter and fill each with mince mixture. Serve.
