Pork san choy bau salad

Fast and tasty twist on san choy bau for a quick and delectable dinner!
Ingredients:
  • 2 tsp sesame oil
  • 200g mixed mushrooms, chopped
  • 500g lean pork and veal mince
  • 2 garlic cloves, crushed
  • 2 tsp finely grated fresh ginger
  • 60ml (1/4 cup) oyster sauce
  • 100g baby spinach
  • 250g packet microwave 7 ancient grains or brown rice and chia
  • Butter lettuce leaves, to serve
  • 2 green shallots, thinly sliced
  • 40.00 ml sunflower seeds, toasted, to serve
  • Fried shallots, to serve
  • Kewpie mayonnaise, to drizzle (optional)
Instructions:
  • In a large non-stick frying pan over medium heat, heat oil. Sauté mushrooms for 2-3 minutes until lightly golden. Add mince, cook for 4-5 minutes, breaking up any lumps until browned.
  • Sauté the garlic and ginger until fragrant. Pour in the oyster sauce, then mix in the spinach and rice until heated.
  • Spoon the mince mixture onto lettuce leaves, garnish with green shallot, sunflower seeds, and fried shallot, then add a drizzle of mayonnaise, if desired, before arranging on a platter.
