Beautiful chicken with sun-dried tomatoes, spinach, and mushrooms served with garlic mashed potatoes - simply delicious!
Ingredients:
  • 4 boneless, skinless chicken breast halves
  • 0.25 cup all-purpose flour
  • salt and pepper to taste
  • 1 tablespoon dried oregano
  • 2 tablespoons olive oil
  • 0.75 cup butter
  • 3 cups sliced portobello mushrooms
  • 0.75 cup sun-dried tomatoes
  • 0.5 cup packed fresh spinach
  • 1 cup Marsala wine
Instructions:
  • Place the chicken breasts between two sheets of wax paper and gently pound them to 1/4 inch thickness using a meat mallet. Dust the chicken with flour, salt, pepper, and oregano for added flavor.
  • Fry chicken in a skillet with olive oil over medium heat until fully cooked and golden brown, ensuring even cooking. Set aside and keep warm.
  • In a skillet, melt butter over medium heat. Add mushrooms, sun-dried tomatoes, and Marsala wine. Sauté for 10 minutes, stirring occasionally. Add spinach and cook for 2 more minutes. Serve over chicken.
