Elevate stroganoff with chicken meatball and juicy mushrooms.
Ingredients:
  • 500g Chicken Mince
  • 50g breadcrumbs
  • 40.00 ml finely chopped chives
  • 2.50 gm ground paprika
  • 1 brown onion, thinly sliced
  • 250g cup or brown mushrooms, sliced
  • 185ml chicken stock
  • 22.20 gm tomato paste
  • 160g sour cream
  • 300g fettuccine
Instructions:
  • Mix together the mince, breadcrumbs, chives, and half of the paprika in a bowl. Season with salt and pepper. Roll the mixture into 1-tbs sized balls.
  • Heat a large deep frying pan sprayed with olive oil over medium-high heat. Cook the meatballs, turning occasionally, until browned all over, about 4-5 minutes. Transfer to a plate.
  • Combine onion and mushroom in the pan. Sauté for 5 mins until onion softens. Stir in the rest of the paprika and cook for 1 min until fragrant. Pour in stock, tomato paste, and Worcestershire sauce. Bring to a boil, then simmer on medium heat. Return meatballs to the pan and cook, stirring occasionally, for 5 mins until cooked through. Stir in sour cream and cook for 2 mins until sauce thickens slightly. Season to taste.
  • Cook the pasta in a large saucepan of boiling water according to the package instructions until it's perfectly al dente. Then, drain well before proceeding.
  • Serve the pasta on individual plates and generously top with the flavorful meatball stroganoff.
