Chicken meatballs with couscous

"Delicious chicken meatballs and couscous, a family favorite for busy nights."
Ingredients:
  • 1 red onion, finely chopped
  • 500g chicken mince
  • 250.00 ml dried breadcrumbs
  • 125.00 ml flat-leaf parsley, chopped
  • 18.20 gm extra virgin olive oil
  • 87.50 gm mild korma curry paste
  • 2 x 400g cans Brand diced tomatoes
  • 125.00 ml Brand natural yoghurt
  • Coles Brand couscous, cooked, to serve
Instructions:
  • In a bowl, mix together onion, garlic, mince, egg, breadcrumbs, and half of the parsley. Season with your favorite seasonings. Shape the mixture into balls. Cover and refrigerate for 30 minutes before cooking.
  • 1. In a large non-stick frying pan over medium-high heat, warm oil. Brown meatballs by turning them for about 10 minutes. Set aside on a plate. 2. Into the same pan, add curry paste and cook for 1 minute until aromatic. Mix in tomatoes and 1/2 cup water. Season to taste. 3. Return meatballs to the pan. Simmer for 10 minutes, allowing sauce to thicken and meatballs to cook through. 4. Stir in yogurt. Finish with a sprinkle of remaining parsley before serving.
  • Serve the dish alongside a bed of fluffy couscous.
