Spice up Italian meatballs with Moroccan flavors on zesty citrus couscous.
Ingredients:
  • 500g chicken mince
  • 10.00 gm Middle Eastern spice mix
  • 540g Mutti Tomato Passata
  • 50g baby spinach leaves
  • 40.00 ml pine nuts, toasted
  • 375ml (1 1/2 cups) water
  • 80ml (1/3 cup) fresh orange juice
  • 1 chicken style stock cube, crumbled
  • 290g (1 1/2 cups) couscous
  • 40.00 ml chopped fresh chives
  • 2 tsp finely grated orange rind
  • Greek-style natural yoghurt, to serve
Instructions:
  • Mix together the mince, garlic, and 2 teaspoons of Middle Eastern spice mix in a bowl. Season with pepper, then shape tablespoonfuls of the mixture into balls and set them on a plate.
  • In a large, deep frying pan over medium-high heat, heat the oil. Brown the meatballs by cooking for 5 minutes, turning often. Add passata and remaining spice mix, then reduce heat to medium. Cover and cook for 8 minutes until meatballs are cooked through, stirring occasionally. Lastly, add spinach and pine nuts and cook for 1 minute until spinach wilts.
  • In a saucepan over high heat, combine water, orange juice, and stock cube. Bring to a boil, then remove from heat. Stir in the couscous and cover. Allow it to sit for 5 minutes until all liquid is absorbed. Fluff the grains with a fork and then stir in chive and orange rind. Enjoy!
  • Place the couscous in serving bowls and generously ladle the meatball and spinach mixture on top. Accompany with a dollop of creamy yogurt on the side.
