Chicken meatballs with couscous

Whip up flavorful chicken meatballs and couscous for a family-friendly weeknight dinner.
Ingredients:
  • 1 red onion, finely chopped
  • 500g chicken mince
  • 1 egg, lightly beaten
  • 250.00 ml dried breadcrumbs
  • 125.00 ml flat-leaf parsley, chopped
  • 18.20 gm extra virgin olive oil
  • 87.50 gm mild korma curry paste
  • 2 x 400g cans Brand diced tomatoes
  • 125.00 ml Brand natural yoghurt
  • Coles Brand couscous, cooked, to serve
Instructions:
  • In a bowl, mix together onion, garlic, minced meat, egg, breadcrumbs, and half of the parsley. Add seasoning. Shape the mixture into balls, cover, and refrigerate for 30 minutes before cooking.
  • In a large non-stick frying pan, heat oil over medium-high heat. Brown the meatballs by cooking and turning for 10 minutes. Place the meatballs on a plate. Add curry paste to the pan and cook until fragrant for about 1 minute. Add tomatoes and 1/2 cup water, then season. Return the meatballs to the pan and simmer for 10 minutes until the sauce thickens and the meatballs are fully cooked. Stir in yogurt and garnish with parsley before serving.
  • Pair with fluffy, fragrant couscous.
