Ingredients:
  • 400g chicken mince
  • 2 garlic cloves, crushed
  • 1cm piece fresh ginger, finely grated
  • 1 green onion, finely chopped
  • 82.50 ml dried breadcrumbs
  • 10.80 gm hoisin sauce
  • 5.30 gm soy sauce
  • 9.20 gm vegetable oil
  • 1/2 x 375g packet rice stick noodles
  • 1 small Lebanese cucumber
  • 1 small carrot, peeled
  • 1 red capsicum, thinly sliced
  • 22.00 gm sweet chilli sauce
Instructions:
  • Mix together mince, garlic, ginger, onion, breadcrumbs, hoisin sauce, and soy sauce in a bowl. Add a dash of pepper for seasoning. Shape the mixture into small balls using a level tablespoon. Transfer the balls onto a plate, cover with plastic wrap, and refrigerate.
  • Prepare salad by soaking noodles in a heatproof bowl with boiling water for 10 minutes until tender. Fluff noodles with a fork, drain, and rinse under cold running water. Transfer noodles to a bowl and use a vegetable peeler to create ribbons from cucumber and carrot. Add cucumber, carrot, capsicum, and sweet chili sauce to the noodles, gently toss to combine.
  • In a large non-stick frying pan over medium heat, warm the oil. Cook the meatballs, turning occasionally, for 10 minutes or until fully cooked. Enjoy with noodle salad.
