Chicken Milanese with Fresh Tomato Sauce

Tangy chicken coated in Progresso® bread crumbs with shallot-tomato sauce - a 30-minute Italian feast.
Ingredients:
  • 6 1/2 teaspoons olive oil
  • 2 cups grape tomatoes cut lengthwise I half
  • 1 large shallot, chopped
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground pepper
  • 1/4 cup dry red wine
  • 1/2 cup chopped fresh basil leaves
  • 1/2 cup Progresso™ Italian-style panko crispy bread crumbs
  • 1/4 cup grated fresh parmesan cheese
  • 4 boneless skinless chicken breasts (1 1/2 lb)
  • Cooking spray
Instructions:
  • Heat 2 teaspoons of oil in a 12-inch nonstick skillet over medium-high heat. Sauté tomatoes, shallots, salt, and pepper for 4 minutes until shallots are tender, stirring frequently. Pour in the wine and cook for an additional 30 seconds. Remove from heat and transfer to a medium bowl. Stir in basil and cover to keep warm.
  • Combine bread crumbs and cheese in a shallow bowl. Heat 4 1/2 teaspoons oil in the skillet over medium heat. Coat both sides of the chicken with cooking spray, then coat with the bread crumb mixture. Cook the chicken in the oil for 12 to 15 minutes, turning once, until the juices run clear and the thickest part reaches a temperature of at least 165°F.
  • Place a chicken breast on each of the 4 plates and drizzle the sauce evenly over the chicken.
