Crispy pan-fried Chicken Milanese made with thin breaded chicken cutlets for a quick and delicious meal.
Ingredients:
  • 2 large eggs
  • kosher salt and ground black pepper to taste
  • 0.75 cup all-purpose flour
  • 1 cup Italian seasoned bread crumbs
  • 2 skinless, boneless chicken breast halves, thinly sliced
  • 0.25 cup vegetable oil for frying
  • 1 lemon, cut into wedges
Instructions:
  • Heat your oven to a toasty 200 degrees F (95 degrees C).
  • In a shallow dish, whisk eggs with a pinch of salt and pepper. Place flour in one dish and bread crumbs in another.
  • Coat chicken in flour, dip in beaten eggs, then press into bread crumbs. Shake off excess ingredients by gently tossing between your hands. Place breaded chicken on a plate without stacking while finishing the rest.
  • In a large skillet over medium heat, heat vegetable oil. Fry chicken in batches of 2 or 3 pieces until golden brown and fully cooked, about 2 to 4 minutes per side. Ensure the internal temperature reaches 165°F (74°C) before transferring the chicken to a baking sheet to keep warm in a preheated oven.
  • Garnish with fresh lemon wedges before serving.
