Savory Chicken Murphy with Italian sausage, chicken, peppers, potatoes, mushrooms, and wine sauce.
Ingredients:
  • 1 pound Italian sausage, cut into 1/2 inch pieces
  • 1 pound skinless, boneless chicken breast halves - cut into cubes
  • 4 tablespoons olive oil
  • 1 pound cremini mushrooms
  • 1 large onion, diced
  • 1 red bell pepper, cut into 3/4-inch pieces
  • 1 green bell pepper
  • 3 cloves garlic, minced
  • 4 large potatoes
  • 1 cup white wine
  • 1 cup reduced-sodium chicken broth
  • 1/4 cup brine from cherry peppers
  • 1 teaspoon Italian seasoning
  • 3/4 teaspoon salt
  • 1 cup sliced hot cherry peppers
  • chopped fresh Italian parsley
Instructions:
  • Assemble all ingredients.
  • Brown the sausage in a 5- to 6-quart Dutch oven over medium heat for 6 to 8 minutes, then remove to a bowl using a slotted spoon.
  • Spread a layer of flour on a plate and gently coat the chicken pieces in the flour until fully covered.
  • In a Dutch oven, heat 1 tablespoon of oil. Add the chicken and cook until lightly browned, about 4 to 5 minutes. Transfer the chicken to the bowl with the sausage.
  • Drizzle the remaining tablespoon of oil into the Dutch oven, then add mushrooms, onion, and bell peppers. Sauté until tender, about 6 to 8 minutes.
  • Add the garlic and cook until fragrant, approximately 1 minute.
  • Combine potatoes, white wine, chicken broth, brine, Italian seasoning, and salt in a pot. Bring to a boil, then reduce heat and simmer covered until potatoes are tender, around 10 minutes.
  • Combine the vibrant Peppadew peppers with the sizzling browned chicken and sausage. Cook and stir until everything is heated through, and the sauce gets a touch thicker, approximately 3 minutes.
  • Garnish with fresh parsley just before serving.
