Creamy chicken casserole with Béchamel sauce and egg noodles - versatile and comforting.
Ingredients:
  • 2 large chicken breasts
  • 1 stalk celery, cut into chunks
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 (8 ounce) package extra wide egg noodles
  • 4 cups milk
  • 0.25 cup butter
  • 0.25 cup all-purpose flour
  • 2 teaspoons salt
  • 0.5 teaspoon garlic powder
  • 0.125 teaspoon ground nutmeg
  • 0.25 cup bread crumbs
  • 0.5 cup Parmesan cheese
  • 2 tablespoons olive oil
Instructions:
  • In a saucepan, mix chicken, celery, 1 teaspoon of salt, and black pepper. Add water until ingredients are fully submerged. Boil until chicken is cooked through, about 20-25 minutes or until it reaches 165°F (74°C) internally. Transfer chicken to a cutting board to cool, then dice into bite-sized pieces. Dispose of celery and water.
  • Preheat oven to 350 degrees F (175 degrees C) and coat a 9x13-inch casserole dish with cooking spray.
  • 1. Boil a large pot of lightly salted water. Cook egg noodles in the boiling water, stirring occasionally, until al dente, about 5 minutes. Drain and transfer noodles to a large bowl. Add chicken and toss to combine.
  • In a large saucepan over medium heat, gently simmer the milk until ready to use.
  • In a large saucepan over medium-high heat, melt butter. Gradually whisk in flour, making sure each addition is fully incorporated before adding more. Cook and stir until a blonde roux forms, about 5 to 10 minutes. Gradually pour in milk while stirring constantly; bring to a boil and cook for 10 minutes. Add salt, garlic powder, and nutmeg to the milk mixture; pour over noodles and mix well.
  • Spread a layer of bread crumbs in the casserole dish, followed by the noodle mixture. Sprinkle with Parmesan cheese, then drizzle with olive oil.
  • Bake until the filling is bubbly and the top layer of noodles is a crispy golden brown, about 45 minutes to 1 hour in a preheated oven.
