French-style Chicken Thighs with Sweet Apples - Bon Appétit!
Ingredients:
  • 18.20 gm olive oil
  • 40.00 gm butter
  • 1.5kg chicken thigh fillets, halved
  • Ground nutmeg
  • 2 Granny Smith apples, peeled, cored, thinly sliced
  • 1 large brown onion, finely chopped
  • 125ml (1/2 cup) dry apple cider
  • 125ml (1/2 cup) chicken style liquid stock
  • 80ml (1/3 cup) apple cider vinegar
  • 1/4 tsp dried thyme
  • 20.00 ml plain flour
  • 2-60.00 gm water
  • 2 Granny Smith apples, extra, peeled, cored, thinly sliced
  • 125g (1/2 cup) sour cream
Instructions:
  • Preheat oven to 180°C. In a large heavy-based frying pan over medium-high heat, warm the oil and half of the butter. Cook one-third of the chicken until golden on both sides for 2-3 minutes. Transfer to a large casserole dish, season with salt, pepper, and sprinkle with nutmeg. Repeat with the remaining chicken in 2 more batches.
  • Step up the flavor! Lower the heat to medium, then sizzle the apple in the pan for 2 minutes per side until lightly golden. Layer it over the chicken in the dish. Lower the heat to medium-low, and caramelize the onion in the pan, stirring frequently, for 3-4 minutes until tender. Pop it into the dish. Cover and bake for 40 minutes to perfection. Enjoy your delicious meal!
  • In a saucepan over medium-high heat, combine cider, stock, vinegar, and thyme. Bring to a boil. In a small bowl, mix flour with a little water. Gradually whisk the flour mixture into the cider mixture until well combined and thickened. Simmer for 3 minutes.
  • Heat the rest of the butter in a skillet over medium heat, then add the additional apple slices and cook for 3-4 minutes per side until golden brown.
  • Stir in the sour cream into the cider mixture over medium heat for about 1 minute, or until the sauce is heated through.
  • Transfer the flavorful chicken and apple mix to a beautiful serving platter. Drizzle the delicious sauce over the top and garnish with the apple rings for an elegant presentation.
