Authentic and flavorful Thai Panang curry, reminiscent of restaurant quality.
Ingredients:
  • 1 pound skinless, boneless chicken breast halves, thinly sliced
  • 1 teaspoon red curry paste
  • 1 tablespoon sugar
  • 1 red bell pepper, cut into strips
  • 1 green bell pepper, cut into strips
  • 1 small onion, cut into strips
  • 1 (10 ounce) can coconut milk
  • 1 tablespoon fish sauce
Instructions:
  • In a large skillet, heat vegetable oil over medium heat. Cook chicken until no longer pink, about 5 minutes. Remove chicken, then stir in red curry paste and sugar; cook for 1 minute. Add bell peppers and onion; cook for 2 minutes. Pour in coconut milk, return chicken to the pan, bring to a simmer over medium-high heat. Cook until onions and peppers are tender, about 5 minutes. Stir in fish sauce and serve.
