Coconut milk Panang curry chicken simmered with fragrant spices for a deliciously bold and aromatic flavor.
Ingredients:
  • 1 tablespoon vegetable oil
  • 0.25 cup Panang curry paste
  • 4 cups coconut milk
  • 10 ounces boneless chicken breast, cubed
  • 2 tablespoons palm sugar
  • 2 tablespoons fish sauce
  • 6 makrut lime leaves, torn in half
  • 2 fresh red chile peppers, sliced
  • 1 small bunch Thai basil leaves
Instructions:
  • Start by warming oil in a wok or large pot over gentle heat. Stir in the curry paste and cook until aromatic, approximately 5 minutes. Pour in the coconut milk and let it come to a boil. Add the chicken and cook until nearly done, roughly 5 minutes. Introduce the palm sugar, fish sauce, and lime leaves. Let everything simmer until the flavors meld together, around 5 minutes.
  • Transfer the chicken and sauce into a large bowl. Top with red chile peppers and fresh basil for a flavorful garnish.
