Beef, green bean and cauliflower panang curry

Whip up a quick and flavorful Asian beef curry for a healthy and satisfying meal in just minutes.
Ingredients:
  • 27.60 gm oil
  • 500g beef stir-fry strips
  • 1 onion, cut into wedges
  • 87.50 gm (3 tbsp) store-bought panang curry paste
  • 250ml coconut milk
  • 125ml water
  • 44.00 gm sweet chilli sauce
  • 18.30 gm fish sauce
  • 250g cauliflower flowerets
  • 100g green beans, cut into 5cm lengths
  • 10.60 gm lime juice
  • steamed rice, to serve
Instructions:
  • Heat half of the oil in a large deep non-stick frying pan over high heat. Sear the meat in batches for 2 to 3 minutes until golden brown. Remove from heat.
  • Heat the remaining oil in a pan until sizzling. Cook the onion for 2-3 minutes until tender. Stir in the curry paste, coconut milk, water, sweet chili sauce, fish sauce, and cauliflower. Simmer over medium-low heat for 8-10 minutes. Gently add the beans to the pan.
  • Add the cooked meat back into the pan and continue cooking for an additional 5 minutes. Mix in the fresh lime juice and serve the delicious dish with rice.
