Vibrant veggie-packed chicken paella for a nutritious twist.
Ingredients:
  • 18.20 gm olive oil
  • 1 red onion, sliced
  • 2 garlic cloves, crushed
  • 400g chicken mince
  • 2 tomatoes, chopped
  • 1 red capsicum, deseeded, sliced
  • 1 zucchini, trimmed, sliced
  • 200.00 gm Basmati rice, well rinsed
  • 637.50 gm salt reduced chicken style liquid stock
  • 1/2 tsp saffron threads
  • 1.25 gm mild paprika
  • 250.00 ml frozen baby peas
Instructions:
  • In a large, heavy-based saucepan over medium-high heat, heat oil until shimmering. Add onion and garlic, sauté until soft, about 3 to 4 minutes. Then add mince and continue cooking for 2 minutes, stirring constantly with a wooden spoon.
  • Combine fresh, vibrant tomatoes, capsicum, and zucchini in the pan and sauté for 2 minutes. Introduce the rice and pour in the flavorful stock. Sprinkle in the luxurious saffron and aromatic paprika, stirring gently. Allow the mixture to reach a gentle boil before covering and lowering the heat. Let it simmer for 15 to 20 minutes until the stock is fully absorbed, creating a sensational dish.
  • After taking the mixture off the heat, gently fold in the peas. Cover and let it sit for 5 minutes to meld the flavors. Finish with a sprinkle of freshly ground pepper. Time to enjoy your delicious dish!
