Savor a delightful one-pot meal with a twist - chicken paella for the whole family.
Ingredients:
  • 1 tsp saffron threads
  • 40.00 gm boiling water
  • 18.20 gm olive oil
  • 4 (125g each) chicken thigh fillets, trimmed, cut into 4cm pieces
  • 1 medium red onion, chopped
  • 3.75 gm smoked sweet paprika
  • 1 medium red capsicum, chopped
  • 400.00 gm white medium-grain rice
  • 765.00 gm salt reduced chicken style liquid stock
  • 250.00 ml frozen peas, thawed
  • 62.50 ml finely chopped fresh flat-leaf parsley leaves
  • Lemon wedges, to serve
Instructions:
  • In a bowl, combine saffron threads and boiling water. Let it sit for 5 minutes.
  • Heat oil in a large saucepan over high heat. Cook chicken and onion until golden, about 3 to 4 minutes.
  • Sprinkle in paprika, toss in capsicum and rice, and mix well to coat. Pour in saffron mixture and stock. Bring to a boil, then lower heat to a simmer. Cook covered for 15 to 18 minutes until rice is tender. Gently fold in peas and parsley. Season with salt and pepper, then stir to blend flavors. Serve with lemon wedges.
