Chicken breasts in a luscious coconut-garlic gravy, perfect for stuffing puff pastries.
Ingredients:
  • 0.25 cup pine nuts
  • 2 pounds skinless, boneless chicken breast halves, cut into bite size pieces
  • 2 tablespoons soy sauce
  • 1 (14 ounce) can unsweetened coconut milk
  • 1.5 teaspoons paprika
  • 0.25 teaspoon ground cumin
  • 1 teaspoon curry powder
  • 2 teaspoons cornstarch
  • 0.25 cup cold water
Instructions:
  • In a skillet over medium-high heat, toast the pine nuts, stirring frequently, until evenly golden brown. Remove from heat and set aside.
  • Heat butter in a large skillet over medium heat until melted. Add the chicken and cook for 5 to 10 minutes, until no longer pink and juices run clear.
  • Sauté onion and garlic in the skillet until tender. Add pine nuts, soy sauce, coconut milk, and sprinkle with paprika, cumin, and curry powder.
  • Blend water and cornstarch in a small bowl, then add the mixture to the skillet. Stir continuously until a luscious gravy forms.
