Savory Hungarian chicken paprikash: Juicy chicken cooked in butter, onions, and rich paprika. Topped with a creamy sour cream sauce, perfect over dumplings or noodles.
Ingredients:
  • 2 to 2 1/2 pounds of chicken pieces, preferably thighs and legs
  • 2-3 Tbsp unsalted butter
  • 2 pounds yellow onions, (about 2-3 large onions)
  • Black pepper to taste
  • 2 Tbsp sweet paprika , preferably Hungarian
  • 1 teaspoon (or to taste), hot paprika or cayenne
  • 1 cup chicken broth
  • 1/2 cup sour cream
Instructions:
  • Season the chicken generously with salt and let it rest at room temperature.
  • Cut the onions: Cut lengthwise from top to root.
  • Sear the chicken: In a large sauté pan over medium-high heat, melt the butter until hot. Pat the chicken dry with a paper towel and place skin-side down in the pan. Cook for 4-5 minutes until browned, then flip and cook for another 2-3 minutes. Transfer the chicken to a bowl and set aside.
  • Caramelize the onions: Cook sliced onions in a sauté pan until lightly browned, about 7 minutes, stirring occasionally to incorporate the flavorful bits from the chicken.
  • Season the onions: Sprinkle paprika and black pepper over the onions and stir well to combine. Allow to cook for 1 minute.
  • Pour in the chicken broth, making sure to scrape up any flavorful bits from the bottom of the pan. Gently place the chicken over the onions in the pan. Cover and simmer on low heat for 20 to 25 minutes until the chicken reaches an internal temperature of 165°F. Remove from heat and let rest, or continue cooking for an additional 30 minutes for fall-off-the-bone tenderness, if desired.
  • Once the chicken is cooked to your liking, take it out of the pan. Let the pan cool slightly, then gently blend in the sour cream and season with salt. If the sauce cools down too much, briefly reheat it. Return the chicken to the pan and coat it with the sauce.
